Cream of Chicken Soup

Cream Of Chicken Soup (S)

I just put together some cream of chicken soup. It turned out so good that I thought I should share my recipe. If you freeze it in bags of 10 oz each it is wonderful for cooking with later (If your husband doesn’t eat it all first).

Ingredients

  • 2 TBS butter
  • 2 cloves garlic
  • ½ bell pepper (optional)
  • ½ onion (optional)
  • 2 oz cream cheese (I use neufchatel it has less sugar than regular or 1/3 less fat cream cheese)
  • 1 tsp onion powder
  • ½ tsp parsley
  • ½ tsp (pink) salt
  • ¼ tsp pepper
  • 1 tsp (or slightly more) xanthan gum or 3 TBSP Baking Blend
  • ½ cup cooked diced chicken
  • 3 cups chicken broth
  • ¾ cup heavy cream

Directions

In a large pot over low heat add butter and garlic. Place (bell pepper, onion, any other vegetables like celery, okra, or cauliflower), cream cheese, onion powder, parsley, salt, pepper, xanthan gum or baking blend, half the chicken (¼ cup), and half the chicken broth (1 ½ cups) in blender and blend until smooth. Pour this mixture along with the rest of the chicken and chicken broth into the pot and bring to a boil. Lower heat and allow to simmer for about 5-10 minutes. Add heavy cream and simmer until heated through. This will thicken more as it cools

Jan 2017 update
